Recipe Ingredients for Creamy whte bean and vegetable mash

1 onion, chopped
2 stalks celery, chopped
2 carrots, chopped
2 lb yukon gold potatoes
2 c cooked cannelini beans

Recipe Directions for Creamy whte bean and vegetable mash

  1. Healthy saute carrots, onion, and celery for 6-8 min.

  2. Add potatoes and beans and cover with water. Cook until tender, about 20 min. Drain, reserving 1 cup of water.

  3. Mash, adding water as needed.

  4. Season with salt and pepper and serve
