Recipe Ingredients for creamy walnut tofu with soba noodles

8 oz Soba Noodle
252 grams Tofu, Firm
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
2 serving Extra Virgin Olive Oil
4 tbsp chopped Shallots
2 clove Garlic
1 cup, in shell, edible yield (7 nuts) Walnuts, English
1 tbsp Pepper, Black
15 grams Sea Salt

Recipe Directions for creamy walnut tofu with soba noodles

  1. cook onions and garlic in olive oil for 3 minutes on medium heat to soften.

  2. cook soba noodles in separate pot in boiling water until soft.

  3. add salt, pepper, walnuts, onions and garlic, olive oil and 1/3 cup in blender until smooth.

  4. cook green peppers in olive oil for 2 minutes medium heat, add tofu cook until golden and then add cooked soba noodles and mix.

  5. lastly, add walnut sauce to your liking
