The goat cheese and chicken stock create a creamy alfredo-like sauce.

Recipe Ingredients for Creamy Veggie Pasta

1 lb pasta
2 tsp olive oil
14 oz artichoke hearts, chopped
2 cups mushrooms, chopped
1 cup roasted red pepper, diced
2 tsp garlic, minced
2 tbsp basil, fresh, chopped
3 oz goat cheese
1/2 cup chicken stock, divided

Recipe Directions for Creamy Veggie Pasta

  1. Cooke pasta according to box directions. (I recommend Barilla Plus Penne.)

  2. Heat large skillet to medium-low heat and add 2 tsp olive oil. Add next four ingredients and cook for 2 minutes.

  3. Add 1/4 cup chicken stock and stir until slightly thickened. Add basil.

  4. Add goat cheese and remaining chicken stock to the hot drained pasta and stir until creamy. Add vegetables and mix well.

  5. Serve with a fresh salad.
