Very good (and good for you) chowder

Recipe Ingredients for Creamy veggie chowder

2 clove Garlic
3 medium (2-1/2" dia) Onions
2 1tsp Olive Oil
4 medium raw Onion Yellow
8 medium Carrots
12 stalk, medium (7-1/2" - 8" long) Celery
2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
10 clove Garlic
2 medium raw Leeks
20 medium (4-1/8" long) Onions, Spring Or Scallions
24 cup (8 fl oz) Water
4 dash Salt, Table
8 dash Pepper, Black
1 dash Pepper, Black
1 dash Salt, Table
1 tbsp Poultry Seasoning
3 medium Russet Potato
4.5 serving Frozen mixed veggies
16 oz Fat-Free Half and half
0.16 cup Wheat Flour, White, All-purpose, Enriched, Bleached
2.25 cup (8 fl oz) Water

Recipe Directions for Creamy veggie chowder

  1. Cut up onions and finely dice garlic. Heat oil in big stew pan, fry garlic, and onions and cook for about 10 minutes or so till they are very soft. Add spices and cook half a minute. Add 2 cups non sodium veggie broth 2 cups water and diced potatoes. Bring to boil and then simmer for about 10 minutes. Add frozen veggies and let simmer for another 30 minutes. Add the 2 cups of non fat creamer. turn heat to med-low and simmer for about a half hour more. At the end add 2 tbsp of flour mixed with about 1/4 cup water to thicken and let simmer for about 5 minutes more. Turn of heat and stir every 5 minutes for about 20 minutes. Then enjoy!!

  2. Makes 10 x 1 cup portions and freezes very well.
