I just used the veggies I had in my fridge because a lot of things were starting to turn and I wanted to use up as much as possible, but you could use whatever you like!

Recipe Ingredients for Creamy Vegetable Soup

900 ml low sodium chicken stock
2 cups water
1 head cauliflower
1 small yellow onion
4 stalks celery
2 carrots
1 cup cabbage
1/4 tsp. black pepper
1/4 tsp. cumin
1 clove garlic
2 cups spinach
1 cup 1% milk

Recipe Directions for Creamy Vegetable Soup

  1. Chop cauliflower, celery, onion, carrot and cabbage into small pieces.

  2. In a large pot add chicken stock and water than add veggies and bring to a boil. Simmer until carrots are soft. While simmering, add pepper, cumin and garlic. Remove from element, let cool for about 10 minutes. Add spinach to pot. Puree all contents of pot or even better use an emulsifier. Return everything to the pot, add the milk and heat to serve. Since this is so not bad for you, you can add a little low fat grated cheddar on top and not feel guilty!
