Vegetable soup made with cannelloni beans to give it a creamy texture without milk or cream

Recipe Ingredients for Creamy Vegetable Soup

1 tbsp Olive Oil
4 oz Onions
4 oz Mushrooms, Brown, Italian, Or Crimini
3 clove Garlic
14 oz Broccoli
8 oz Potatoes, Boiled
1 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
7 oz Cannellini Beans
3 serving Better Than Bouillon - Chicken Base
14 oz Cauliflower

Recipe Directions for Creamy Vegetable Soup

  1. Heat 4 cups water in the microwave, about 5 min, until warm. Stir in chicken base until thoroughly dissolved.

  2. Heat oil in medium pot of medium heat. Chop onion, mushrooms and garlic and add to oil. Cook until soft, stirring frequently, about 5 min.

  3. Chop broccoli, cauliflower, and potato. Drain and rinse beans.

  4. Add the broccoli, cauliflower, potato, beans , broth and any seasonings you like to the pot. (I use a pinch of red pepper flake, and white pepper) Cook, covered, for 30 min. Remove from the heat.

  5. Puree the mixture until smooth using a stick (immersion) blender, or allow to reach lukewarm temperature and puree in a blender.
