Recipe Ingredients for Creamy Vegetable and Rice Turnover

14 1/10 oz. pillsbury pie crust
1/2 c. uncooked Success Whole Grain Brown Rice (=1 Boil-in-bag)
2 T. olive oil
1/2 c. diced fresh mushrooms
1/2 c. diced sweet onion
1/2 c. fresh or frozen broccoli florets, diced
1/4 c. fresh carrots, finely diced
1/4 c. diced green pepper
1/4 c. frozen corn
8 oz. neufchatel cheese, softened
1/2 c. shredded colby jack cheese
1 T. diced pimentos

Recipe Directions for Creamy Vegetable and Rice Turnover

  1. Preheat oven to 425 degrees F. Spray baking sheet with nonstick spray. Bring pie crusts to room temp.

  2. Cook rice per package directions.

  3. Chop all veggies. Heat olive oil in skillet over medium heat. Add veggies and stir fry for 5-10 minutes until tender. Remove from heat.

  4. In a large bowl, combine cream cheese, pimentos, and shredded cheese. Stir in cooked rice and veggies. Blend well. Salt and pepper to taste, if desired.

  5. Unroll dough and cut into triangles or use a dumpling press. Place about 1/4 c. of rice mixture in center of cut dough.Wet fingers in water and run around edges of dough; fold and press to seal. May use for on edges if desired. Place turnover on prepared pan. If desired, make an egg wash and brush over tops.

  6. Bake for 15-20 minutes or until golden brown. Remove from oven and serve.
