Recipe Ingredients for Creamy vegetable bake

600 grams Parsnips
250 grams Squash, Winter, Butternut
300 grams Double Cream
25 grams Gruyere Cheese
1/2 tsp Thyme, Fresh
2 tbsp chopped Onions

Recipe Directions for Creamy vegetable bake

  1. Put the onion, one sprig of thyme and the cream in a pan and slowly heat until almost boiling. Remove from the heat and allow to cool, then strain the cream (it also taste good if you just leave the onion in).

  2. Peel and thinly slice the parsnip and butternut squash. Layer in an ovenproof dish and pour over the cream. Grate the cheese and sprinkle on top.

  3. Bake in the oven for 1h 15 mins at 200 degrees until golden and the vegetables are soft. Serve with something green.
