Tasty baked vegetables in a creamy white sauce topped with crispy breadcrumbs

Recipe Ingredients for creamy vegatable bake

3 potatoes
5 carrots
1/2 turnip
3 onions
1 zucchini
1 courgette
500 g broccoli
2 tbsp butter
2 tbsp flour
400 ml semi-skimmed milk
150 g breadcrumbs

Recipe Directions for creamy vegatable bake

  1. peel and chop all the vegetables

  2. put the potatoe, carrot, turnip (or parsnip) in a large pot of water, and boil for 20mins

  3. After 20mins add the broccoli and continue boiling for 15mins. Then take off the heat and drain.

  4. in a large frying pan, gently sauté the onions until soft

  5. Add the courgette and zucchini to the pan and fry until soft (about 10-15mins on a low heat).

  6. In a heavy-bottomed saucepan, heat the butter.

  7. Add the flour and stir continuously while keeping it at a low heat. Cook the roux for 4-5mins.

  8. Add the milk, and gently simmer until the sauce thickens (you may want to add some pepper, garlic, or chilli to this for added flavour.

  9. In a 2L cassarole dish, layer in the vegtables (I usually put the zucchini, courgette and onion mix on the bottom).

  10. Pour the sauce over the vegetables and scatter the breadcrumbs on top.

  11. Bake in the oven at 200'C for 10-15mins, or until the breadcrumbs brown and crisp.
