Recipe Ingredients for Creamy Turnip Soup

3 tbs butter
2 leeks, sliced thinly
1 medium onion, sliced thinly
1 medium potato, peeled, cut into 1/2 slices
2 1/2 lbs turnips, peeled, cut into 1/2 slices
5 cups chicken broth
1 3/4 cups milk
1/4 cup cream
2 carrots
1 turnip

Recipe Directions for Creamy Turnip Soup

  1. Melt butter in Dutch oven over med heat.

  2. Add leeks and onion and saute until onion is translucent, about 12 minutes

  3. Add 5 turnips and potato and saute 2 minutes

  4. Add 5 cups broth and bring to a boil.

  5. Reduce heat and simmer until vegetables are very tender, about 30 minutes.

  6. Puree soup in blender in batches until very smooth

  7. Return to Dutch oven.

  8. Add milk and cream. Bring to simmer. Season to taste with nutmeg, salt and pepper.

  9. Cut 2 carrots into matchstick strips and cut 1 turnip into matchsticks also. Cook in microwave approx 2 minutes until tender crisp.

  10. Garnish soup with crisp vegetables and serve
