Recipe Ingredients for Creamy Turkey and Wild Rice Soup

5 c chicken broth
3 c water
264 g turkey, chopped
2 1/2 c (1-6oz pkg, uncooked) Uncle Ben's long Grain & Wild Rice
1/2 tsp salt
1/2 tsp pepper
1/2 c flour
1/3 c butter
2 c half and half
1/2 c carrots, chopped
1/2 c celery, chopped
1/2 c onion, chopped
1 T olive oil

Recipe Directions for Creamy Turkey and Wild Rice Soup

  1. Saute oil, carrots, celery and onion in a pan until tender.

  2. Put broth, water and turkey in a pot and boil. Stir in rice (reserve seasoning packet) and sauteed vegs.

  3. In the saute pan add butter, salt and pepper. Stir in seasoning packet until mixture is bubbly.

  4. Add flour, one tablespoon at a time, to form a roux.

  5. Whisk in half and half until fully incorporated and smooth. Cook until thickened, about 5 min.

  6. Stir cream mixture into broth and rice.

  7. Cook over medium heat until heated through, 10 to 15 min.
