A creamy soup to use leftover Thanksgiving turkey. Can substitute roasted chicken. Add a package of gnocchi to finish.

Recipe Ingredients for Creamy Turkey & Spinach Soup

4 cups water
2 cups chicken broth
4 cups turkey
2 onions
6 celery stalks
3 carrots
2 cloves garlic
2 cups spinach
2 tbsp italian seasoning
1 salt
1 pepper
2 cups whipping cream
2 cups half and half

Recipe Directions for Creamy Turkey & Spinach Soup

  1. Sweat 2 chopped onions, 6 chopped celery stalks, 3 shaved carrots and 2 cloves minced garlic in soup pan until soft, opaque and aromatic.

  2. Add 4 cups water, 2 cups chicken broth, 4 cups chopped cooked turkey (or roasted chicken), 2 tbsp italian seasoning, salt, pepper.

  3. Simmer for 30 minutes.

  4. Stir in 2 cups whipping cream and 2 cups half and half.

  5. Remove from heat and wilt in 2 cups chopped fresh spinach.

  6. (Optional: before removing from heat to add spinach, add a 16 oz package of potato gnocchi and simmer for 3-4 minutes.)
