Recipe Ingredients for Creamy Turkey Sausage and Wild Mushroom Sauce

1 T. olive oil
1/2 cup chopped shallots
3 cloves garlic, minced
2 cups sliced mushrooms
1 pound turkey sausage
1 t. dried thyme
1 t. dried oregano
1/2 salt
1/2 t. freshly ground black pepper
2 cups reduced-sodium chicken broth
1/2 cup frozen green peas
1 1/2 cups low-fat sour cream
2 ounces Romano cheese, grated

Recipe Directions for Creamy Turkey Sausage and Wild Mushroom Sauce

  1. Cook the pasta according to the package directions, then drain.

  2. Heat oil in a large skillet over medium-high heat. Add the shallots and garlic and cook, stirring for 1 minute. Add the mushrooms and cook, stirring a few times, until they are tender and releasing juice, 3 to 5 minutes. Add the sausage and brown on all sides, about 5 minutes. Add the thyme, oregano, salt, and pepper and stir until well combined and the herbs are fragrant, about 1 minute. Add the broth and bring to a simmer. Reduce the heat to medium-low, partially cover the pan, and simmer until the sausage is cooked through, about 10 minutes.

  3. Add peas and simmer 1 minute more. Stir in the sour cream and cheese and simmer 1 minute to heat through. Remove from the heat, season with salt and pepper to taste, and stir in the parsley.

  4. Serve over Angel Hair pasta.
