Creamy Tomato-Vodka Soup Recipe

Tasty homemade version of a classic that is fairly easy to make. Best during garden season if you have plum tomatoes, so that you don't have to use the canned type. Note I had to compute this recipe with fresh tomatoes, so the real sodium count may be higher if using canned. Choose low sodium broth and tomato sauce if possible too.

Recipe Ingredients for CrEaMy ToMaTo-VoDkA SoUp

1 tablespoon extra-virgin olive oil
2 onions
2 cloves garlic
32 ounces vegetable broth
56 ounces italian plum tomatoes
15 ounces tomato sauce
1/4 cup vodka
1 teaspoon salt
1 teaspoon sugar
2 cups half-and-half
6 sprigs flat-leaf parsley

Recipe Directions for CrEaMy ToMaTo-VoDkA SoUp

  1. In a medium skillet, heat EVOO over medium high heat. Add onions (sliced) and garlic (smashed and peeled). Cook, stirring often, for 30 seconds.

  2. Add broth, vodka, parsley, salt and sugar to the slow cooker, then sauteed onions and garlic. Cover and cook on high heat to stew tomatoes, 5 hours. Discard parsley sprigs.

  3. Using a blender or food processor, puree the soup in batches. Stir in half-and-half.

  4. Cook in the covered slow cooker on low heat until heated through again, 20 to 30 minutes.
