A creamy, tasty veggie soup. Use low-sodium beef bouillon seasoning instead of the regular bouillon to lower the salt content even further.

Recipe Ingredients for Creamy Tomato-Vegetable Soup

2 T butter
2 tsp butter
1 cup onion, chopped
1 cup celery, diced
2 cups carrots, shredded
4 tsp beef bouillon
4 cups low sodium tomato juice
1/2 cup cream sherry
1/2 tsp pepper
2 cups evaporated skim milk
2 T flour
2 tsp flour

Recipe Directions for Creamy Tomato-Vegetable Soup

  1. In saucepan, heat butter over medium heat until bubbly and hot.

  2. Add onion and celery and suate until onion is transluscent.

  3. Stir in carrot and saute until veggies are tender.

  4. Spring veggies with flour and broth mix and stir until coated.

  5. Gradually stir in juice and sherry, stirring occasionally, bringing mixture to a boil.

  6. Reduce heat to low. Add pepper and let simmer until mixture thickens slightly, roughly 2-3 minutes

  7. Remove pan from heat and gradually stir in the milk. Return to low heat and let it simmer until the flavors blend (about 2 minutes).
