Recipe Ingredients for Creamy Tomato Soup

6 tbsp butter, unsalted
2 small onions, finely chopped
4 cloves garlic, minced
1/2 cup dry white wine
4 cups tomatoes, chopped
1 tsp salt, coarse
1/4 tsp ground pepper, fresh
1 cup fresh basil leaves,loosely packed
1/2 cup heavy cream

Recipe Directions for Creamy Tomato Soup

  1. Melt butter in a medium sauce pan over medium heat.

  2. Add onions and garlic and cook, stirring until onions are translucent, about 3 minutes.

  3. Add wine, tomatoes, salt and pepper.

  4. Cook just until tomatoes are falling apart, about 5 minutes.

  5. Stir in basil and remove from heat.

  6. Let cool slightly. Transfer tomato mixture to a blender, filling the jar no mor than halfway; work in batches if necessary. Cover lid w/ a clean dish towel and press lid securely in place while blending.

  7. Return soup to saucepan. Add cream, and adjust consistency w/ water if necessary.
