Pasta with roasted veges and tomato sauce

Recipe Ingredients for creamy tomato sauce with veges and pasta

2 zucchini
8 oz mushrooms
1 red pepper
1 1/2 lb asparagus
1 tbsp olive oil
16 oz pasta
1 tsp olive oil
1/2 onion
5 garlic cloves
28 oz tomatoes
10 oz tomato sauce
8 leaves basil
1 tsp salt
1/4 tsp pepper
1/4 cup light sour cream

Recipe Directions for creamy tomato sauce with veges and pasta

  1. Heat 1 tsp olive oil, add onions and cook, then garlic and tomatoes. Season to taste with salt, pepper, fresh basil and pinch of red pepper. Simmer as long as you prefer, add sour cream just before serving.

  2. Broil vegetables for 8 minutes on high with olive oil, garlic salt, pepper, salt and red pepper to taste.

  3. Cook pasta as directed.

  4. Add pasta, veges and sauce to plates.
