2 cups per serving add 10 calories for vegetable stock

Recipe Ingredients for creamy tomato and potatoe soup

2 tbls butter
1 onion
1 tomato
16 oz diced tomatoes
2 1/2 russet potatoe
1 cup cauliflower
3 cloves garlic
2 tsp salt
2 tsp black pepper

Recipe Directions for creamy tomato and potatoe soup

  1. melt butter

  2. add oinion diced and sautee for 5 minutes until soft over low-med heat

  3. add tomatoes and garlic and sautee for 5 minutes

  4. season with salt and pepper

  5. add diced potato and 5 cups vegetable stock bring to a boil

  6. reduce heat and simmer for 30 mintues- after 10 add cauliflower

  7. puree with stick blender or in blender/ food processor
