Recipe Ingredients for Creamy Tomato Bean Soup

2 T. olive oil, extra virgin
3 garlic cloves, minced
1 red onion, large, diced
1 Salt and Pepper
4 cups organic chicken broth
28 oz. crushed tomatoes
15 oz. white navy beans, rinsed and drained
1 T. tarragon, fresh chopped

Recipe Directions for Creamy Tomato Bean Soup

  1. Heat oil over medium-high heat in a soup pot. Add the garlic and stil until fragrant. Add the onion and salt and pepper, and saute until the onion is tender and translucent. Add the broth, tomatoes, and beans. Allow to simmer for about 20 minutes, then stil in the tarragon and remove the soup from the heat.

  2. Cool for 15 minutes, then puree with an immersion blender, adding a little more broth or water to thin as necessary.

  3. Reheat the soup and ladle into bowls.
