Wonderful starter to a meal or as a good lunch with sandwich.

Recipe Ingredients for Creamy Tomato-Basil Soup

4 cups canned crushed tomatoes, no salt
4 cups tomato juice
4 tbs butter
1/2 tsp salt
1 tsp black pepper
14 fresh basil leaves
1/2 cup skim milk
1/2 cup light cream

Recipe Directions for Creamy Tomato-Basil Soup

  1. Place tomatoes, butter, salt and pepper in large stockpot; med to high heat. Cook until butter is melted; cover and cook 30 minutes. Add washed and dried basil leaves.

  2. Place small batches of soup mixture in blender; blend until smooth. Return to stockpot; add cream and milk. Heat until hot, but do not boil.

  3. Serve with french bread slices.

  4. NOTE: may substitute fat-free 1/2 & 1/2 for the milk and cream.
