Recipe Ingredients for Creamy tomato basil soup

1 tablespoon olive oil
1/2 cup celery
1/2 cup onion
1/4 cup carrots
1/2 teaspoon dried basil
2 cans tomato soup
1 cup fat free half and half
1/2 cup water
1 teaspoon salt

Recipe Directions for Creamy tomato basil soup

Heat oil in skillet. Chop celery, onions, and carrots and add to frying pan. Add basil to the vegetables. Cook until soften (10 minutes or more). Transfer vegetables to a double boiler, set over simmering water. Add the soup, cream and water and stir. Bring to a simmer and cook for until thick and creamy. Add the salt. Serve hot or allow to cool and refrigerate for up to a week.
