Recipe Ingredients for Creamy Tarragon Chicken Salad

1 lb chicken breast, boneless, skinless, trimmed
1/2 cup chicken broth
1/3 cup reduced fat sour cream
1/4 cup low fat mayonnaise
1/2 tbsp dried tarragon
1/4 tsp salt
1/4 tsp black pepper
3/4 cups celery, diced
3/4 cups red seedless grapes, halved

Recipe Directions for Creamy Tarragon Chicken Salad

  1. Preheat oven to 450F.

  2. Arrange chicken in a glass baking dish large enough to hold it in a single layer.

  3. Pour broth around the chicken.

  4. Bake the chicken, 30-35 minutes.

  5. Transfer the chicken to a cutting board until cool enough to handle, and then cut into cubes. (Discard broth.)

  6. Stir sour cream, mayonnaise, tarragon, salt and pepper in a large bowl.

  7. Add celery, grapes, and chicken; stir to coat.

  8. Refrigerate until chilled, at least 1 hour.
