Recipe Ingredients for Creamy Sweet Potato With Ginger Soup

2 tablespoons olive oil
1 1/2 pounds sweet potatoes
1 large onion
1 tablespoon smart balance
1 pinch sugar
3 garlic cloves
1 1/2 teaspoons ground ginger
1/2 teaspoon ground nutmeg
1/8 teaspoon cayenne pepper
3 cups fat free chicken broth

Recipe Directions for Creamy Sweet Potato With Ginger Soup

  1. Heat oil over med-high heat in deep saute pan.

  2. Saute sweet potatoes and onion until golden brown, 7-8 minutes.

  3. Reduce heat to low and add Smart Balance, sugar and garlic. Cook until all vegetables are spotty caramel color, about 10 minutes longer.

  4. Add ginger, nutmet and cayenne pepper. Continue to saute until fragrant, 30 seconds-1 minute longer.

  5. Add broth; bring to simmer over medium-high heat. Reduce heat to low and simmer, partially covered, until sweet potatoes are tender, about 10 minutes. Using an immersion blender, puree until very smooth. Return to pan; add enought half & half so the mixture is souplike, yet thick enought to float garnish. Taste, and add salt and pepper if needed. Heat through, ladle into bowls, garnish and serve.
