Recipe Ingredients for Creamy Stuffed Peppers

1 tablespoon Olive Oil
1 Apple
1 clove Garlic
1 Vidalia Onion
2 Jalapeno Peppers
3 Yellow Bell Peppers
13 oz Potato
1 teaspoon Salt
1/2 teaspoon Pepper
1/2 cup Reduced Fat Mexican Cheese
1 cup Chicken Broth
1/4 cup Half and Half

Recipe Directions for Creamy Stuffed Peppers

  1. Sautee Vidalia Onion and seeded Jalapeno peppers in 1 tablespoon of oil until they begin to brown. Season with 1 teaspoon salt, freshly ground pepper.

  2. Dice apple, add to sautee. Heat until apples warm.

  3. Add 14 Oz shredded potatoes and 1 cup chicken stock. Simmer until mixture is tender.

  4. Add 1/4 cup half and half, stir and simmer for a few minutes to thicken.

  5. Half peppers, seed and arrange in a baking dish.

  6. Fill peppers with stuffing, top with a sprinkle of reduced fat shredded cheese.

  7. Cover with foil and bake until peppers are tender. Uncover for the last 5 minutes or so to brown cheese.
