Roasted butternut squash and yogurt cheese come together to create a rich, satisfying soup perfect for fall nights.

Recipe Ingredients for Creamy Squash Soup

3 pounds butternut squash
1 onion
2 tablespoons butter
2 tablespoons canola oil
3 cups chicken broth
1 teaspoon dry oregano
1 pinch cayenne pepper
1 salt and black pepper to taste

Recipe Directions for Creamy Squash Soup

  1. Cut the squash in half and remove seeds. Place cut side down on a lined baking sheet and bake at 350 for about an hour, or until tender.

  2. Heat the fats in a medium sauce pan over medium high heat. Chop the onion and add to the pan, cooking until transluscent. Scoop the flesh of the squash out of the skins and add to the pot along with the stock and seasonings. Simmer for 15 min.

  3. Puree the squash mixture in a blender along with the yogurt cheese until smooth. Return to the pot. Heat until hot, but not boiling. Taste and adjust seasonings. Makes 4 large bowls.

  4. Note: if you can't find fat free yogurt cheese at the store, you can make it by draining plain non-fat yogurt in cheesecloth overnight. Once the whey is drained out, the yougurt (now cheese) should have the texture of cream cheese.
