A good low calorie meal all by itself. It also makes a great dip or gravy substitute. It can also be served over pasta in place of alfredo. Serving size is about a cup

Recipe Ingredients for Creamy Squash Soup

1/4 cup adzuki beans
1/4 cup chickpeas
24 oz. winter squash
8 oz. potato
5 oz. apple
1/2 cup oatmeal
1/4 cup millet
4 cups milk

Recipe Directions for Creamy Squash Soup

  1. Peel and cube squash, apple, and potato.

  2. Boil squash, apple, potato, beans, and chickpeas in just enough water to cover until everything is tender.

  3. Add remaining ingredients.

  4. Heat to boiling, and simmer until oatmeal and millet are tender.

  5. Using blender or hand blender, blend soup until smooth.
