Recipe Ingredients for Creamy Squash Soup

2 cups butternut squash, cooked
3 tbsp butter
1 small onion, chopped
1 medium potato, diced
1 small carrot, diced
3 1/2 cups water
3 1/2 cups vegetable broth
2 cups apple juice
1/8 tsp cinnamon
2 tsp salt
1 tsp pepper

Recipe Directions for Creamy Squash Soup

  1. Clean squash, cut in half & scoop out seeds. Place it, cut side down, on lightly oiled baking pan, cover, & bake at 350 degrees for about one hour, until soft. Butternut may be peeled, cubed, and boiled rather than baked, but baking is easier & heightens the flavor.

  2. Meanwhile saute the onions in butter until translucent. Add carrots, potatoes & water. Bring veggies to boil, lower heat, and simmer for 20 minutes until all veggies are tender.

  3. When baked squash cools, scoop out soft insides and discard skins. Combine squash, veggies, and veggie stock with apple juice in a blender or food processor and puree in several batches to a smooth, creamy consistency.

  4. Heat the soup on low heat until hot, but not boiling. Add cinnamon. Season with salt & pepper.

  5. Serve with a hearty dark bread.
