Recipe Ingredients for Creamy Squash, Kale, and Leek Soup

1 lb Butternut Squash
1 tbsp canola oil
3 cups kale, chopped
3 cups leek, chopped with green parts included
1/2 tsp salt
3 cups milk
1/4 tsp nutmeg, ground

Recipe Directions for Creamy Squash, Kale, and Leek Soup

  1. steam squash

  2. heat oil over medium heat. add kale, leek, and salt. stir, cover and cook stirring occasionally until softened, about 5 minutes

  3. add milk, squash(after mashing with spoon), and reduce heat to medium low. simmer for about 5 minutes. add pepper for taste.
