Recipe Ingredients for Creamy Southwest Chicken

558 grams Chicken
85 grams Frozen Onions
3 tsp Minced Garlic
6 oz Green Chiles
140 grams Soup, stock, chicken, home-prepared
107 grams Cottage Cheese
2 oz Fat Free Cheddar
3 grams Taco Seasoning

Recipe Directions for Creamy Southwest Chicken

  1. Spray Large Skillet with cooking spray.

  2. Cut chicken into bite sized pieces and season with Taco Seasoning. Saute' till brown on both sides, adding onions about half way through.

  3. Add garlic and cook for another minute.

  4. Add chicken stock, reduce to desired level.

  5. Puree Cottage cheese and chiles till desired chunkiness.

  6. Add green chiles and cottage cheese, and simmer until chicken is done and sauce is thickened.

  7. Top with cheese, and serve when cheese melts.
