Recipe Ingredients for Creamy Soup

400 g turnip
200 g broccoli
200 g leek
2 garlic cloves
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1 tsp honey
50 g vegetable bouillon
1 tbsp olive oil

Recipe Directions for Creamy Soup

  1. Spray a saucepan with oil etc, and then saute the garlic for a few minutes on a medium heat.

  2. Add in the leek and spices, and saute for about 2mins, til the spices are all fragrant and lovely.

  3. Add in a splash of water with the honey, and cook for another 5-10mins or so, til the leek is soft, adding a bit more liquid if it evaporates. Keep stirring.

  4. Add in the veg. Cook for a few minutes, then add in water to cover.

  5. Cook for approx. 20mins, or until all the veggies are soft and a little mushy and cooked all the way through.

  6. Transfer to a blender and blend til smooth. Add more cinnamon, nutmeg, ginger, salt, honey etc if you feel it needs it, and add more liquid to get to your desired consistency.

  7. Serve!
