Rice-casserole dish thats cheesy / sour with corn and a hint of cilantro flavor to it. Healthy but high in carbs and low in protein. The numbers to the right is the amount to use. The calories I calculated using the ingredients I bought from Kroger so I matched it to the numbers on calorie count so the 270 calorie number is accurate according to my ingredients. It may not be consistent with what you're using.

Recipe Ingredients for Creamy Rice

1.03 cups vegetable broth (4)
2.22 cups long grain rice (2)
1 teaspoon butter (1 tablespoon)
2 teaspoon garlic salt
0.92 cups low fat sour cream (2)
0.68 sweet onion (1/2 of onion in each part)
1/4 cup chopped cilantro
1 garlic clove
1 3/4 tablespoons vegetable oil (2)
1 poblano pepper (2)
11 1/2 oz sweet corn (16)
0.44 pound shredded cheese (1/2)

Recipe Directions for Creamy Rice

  1. Bring water or vegetable broth to boil.

  2. Add butter and salt to the boil mixture until butter is melted.

  3. Add the rice and bring the mixture back to boil. REMINDER - stir the mixture from time to time to evenly distribute everything.

  4. Lower the heat to very low, cover the rice with a tight-fitting lid and cok for 25-30 minutes.

  5. Remove the rice out of saucepan and spread on baking sheet / glass pan or allow to cool in saucepan uncovered.

  6. Combine sour cream with chopped onion and cilantro and add salt to taste.

  7. Heat the oil in frying pan and add chopped onion and minced garlic clove. Also preheat the oven to 350.

  8. Dice the poblano pepper and add to pan once onion has wilted.

  9. Saute mixture for one minute and then let cool and combine with rice.

  10. Drain the can of corn well and add to cool rice / poblano mixture.

  11. Add the sour cream mixture and mix in grated cheese.

  12. Bake for 30 minutes or until heated through in a 350 degree oven. If using a pyrex dish, the oven temperature should be 325 degrees.
