You could easily substitute any milk for the soy, if you prefer. This cooks slowly for a long while, like a risotto.

Recipe Ingredients for Creamy Rice Pudding

1/2 cup brown rice, dry
2 cups water
2 cups light vanilla soymilk
1/4 cup sugar, granulated
2 teaspoons vanilla extract
1/2 cup raisins
1/2 teaspoon cinammon

Recipe Directions for Creamy Rice Pudding

  1. Put all ingredients EXCEPT WATER in a heavy saucepan and bring to a boil, then reduce to a simmer. Add the water half a cup at a time, stirring after each addition, then covering until absorbed. This can take up to an hour.

  2. When the rice is soft, the pudding is done. Serve in 4-ounce ramekins or dishes, and top with a tablespoon of half and half or fat free creamer. Tastes best warm.
