Can leave skins on potatoes. Makes a lot-may be more than 16 servings depending on serving size.

Recipe Ingredients for Creamy red potato salad

4 lbs red potatoes
1 large onion
4 tbsp pickle relish
1 1/2 c light miracle whip
6 tbsp mustard
3 tbsp white vinegar
3 tbsp apple cider vinegar
2 hard boiled eggs
1 tsp horseradish
3/4 tsp celery seed
1 tsp pepper

Recipe Directions for Creamy red potato salad

  1. Boil potatoes in skins until tender; drain, cool.

  2. Chop onion and boil eggs 15 min; let cool.

  3. Meanwhile, blend all other ingredients together.

  4. Chop cooled eggs, add w/ onions to cream mixture.

  5. Peel and cut potatoes; put in large bowl.

  6. Add cream mixture and stir GENTLY.

  7. Chill for several hrs.
