Recipe Ingredients for Creamy Red Curry Shrimp

16 oz Shrimp, Mixed Species
2 stalk, medium (7-1/2" - 8" long) Celery
1 large (7-1/4" to 8-1/2" long) Carrots
1 medium (2-1/2" dia) Onions
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
3/4 cup Rice, White, Medium-grain, Cooked
2 cup (8 fl oz) Water
0.13 cup Cornstarch
3 tsp Curry Powder
12 oz Fire Roasted Diced Tomatoes
1 tsp Soup, Chicken Broth Or Bouillon, Dehydrated, Dry
1 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1 cup Cream, Sour, Cultured
3 tbsp Vegetable Oil, Canola

Recipe Directions for Creamy Red Curry Shrimp

  1. Dice or mince onion

  2. add 1 tbsp oil and onion to small saucepan and saute until onions are clear.

  3. Add rice to onions and cook until rice is lightly toasted.

  4. Bring 1 1/2 c water to a boil (in microwave) and add chicken bouillon.

  5. Add chicken broth to water along with half of the canned tomatoes.

  6. Return to a boil, cover and reduce heat.

  7. While rice is cooking (for about 20 minutes), rinse shrimp and allow to drain.

  8. Mince or dice remaining vegetables.

  9. Heat remaining 2 tbsp vegetable oil and saute raw vegetables until softened.

  10. Add curry powder (and any other spices) along with remaining tomatoes, shrimp, water and sour cream, stirring to fully incorporate.

  11. in a separate bowl, mix cold milk and cornstarch. Add to shrimp mixture.

  12. When sauce has reached desired consistency, remove from heat. Add cooked rice and serve.
