Recipe Ingredients for Creamy Pumpkin Cheesecake with Caramel Apples

3/4 c. graham cracker crumbs
15 gingersnap cookies, crushed
5 tbsp. butter, melted
1 tbsp. light brown sugar
24 oz. cream cheese, softened
1 1/4 c. granulated sugar
1 tsp. vanilla extract
15 oz. pumpkin, pureed
1/2 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. nutmeg
1/8 tsp. ginger
3 eggs
3 tbsp. whipping cream
8 oz. Milk Maid caramels
2 Granny Smith apples, peeled and diced
2 tbsp. butter

Recipe Directions for Creamy Pumpkin Cheesecake with Caramel Apples

  1. Heat oven to 350F. Line 24 muffin cups with paper liners. Do not substitute cooking spray.

  2. In a small bowl, combine cookie crumbs, brown sugar, and butter. Mix until it resembles wet sand. Divide mixture evenly in cups and press firmly into the bottom. Bake for 5 minutes at 350. Do not overbake.

  3. In a large bowl, cream the sugar, cream cheese, and vanilla until smooth and slightly fluffy. Add the pumpkin and spices, blend thoroughly. Add the eggs one at a time, alternating with 1 Tbsp of whipping cream at a time. Scrape down sides frequently and beat until smooth and creamy.

  4. Divide batter equally into 24 muffin cups. Bake at 350 for 25-30 minutes, or until cheesecakes are set. Cool in on a wire rack for 15 minutes, then chill.

  5. While the cheesecakes chill, place 1 Tbsp of butter and apples into a saute pan. Cook until the apples begin to soften being careful not to overcook. (Apples should still have some bite to them.) In a microwave safe bowl, melt caramels and remaining butter. Stir in apples.

  6. Top each cheesecake with 1/2 tsp of caramel apples. Chill for at least 4 hours before serving.
