Potatoe Leek Soup with a bit of a kick

Recipe Ingredients for Creamy Potatoe Leek Soup

6 potatoes
176 g leeks
1 tbsp cayenne powder
5 g broccoli
2 tbsp olive oil
1 cup skim milk
2 serving Irresistibles Bio Vegetable Broth

Recipe Directions for Creamy Potatoe Leek Soup

Cook Potatoes in vegetable broth with cayenne powder and a little shaved broccoli tops added. In a separate pan fry leeks in olive oil for about 8-10 minutes until soft and then add to potatoes. When potatoes are tender, blend portions of the soup and add it back to thicken it (can blend a little or all of it depending on your taste. Add 1 cup of skim milk at the end. Serve with salt and pepper to taste.
