Recipe Ingredients for Creamy Potato Soup

3 tbsp Butter
1 cup, chopped Onions
1 cup, chopped Carrots
1 cup, diced Celery
3 clove Garlic
1 tablespoon Rosemary
1/4 tsp Kosher Salt
5 medium Russet Potato
4 cup Chicken Stock
4 oz Light Sour Cream
8 oz Cheese 2% Milk
1 dash Pepper, Black
1/4 tsp Spices Crushed Red Peppers

Recipe Directions for Creamy Potato Soup

Chop veggies, sautee in butter. Peel potatoes and chop. Add seasoning, stock, potatoes and bring to boil. Reduce to simmer. Cook until potatoes are tender. Remove from heat and allow to cool slightly. Puree with immersion blender. Stir in velveeta and let melt. Just before serving stir in sour cream.
