Recipe Ingredients for Creamy Potato Soup

1 cup skim milk
1 1/2 cups water
2 chicken bouillon cubes
2 medium potatoes
1/4 cup onion
1/4 cup celery
1 tbsp. butter
1/4 tsp. salt
1/4 tsp. pepper
1 tbsp. flour

Recipe Directions for Creamy Potato Soup

  1. Sweat the chopped onion and celery in a heavy sauce pan coated with nonstick spray, until onions are transparent.

  2. Add the water and bouillon cubes and cubed potatoes.

  3. Boil until the potatoes are soft.

  4. Add butter.

  5. Add milk.

  6. Mash potatoes lightly.

  7. Mix flour in small amount of water and add to the soup.

  8. Simmer until slightly thickened.
