A creamy and delicious potato soup, without the extra calories!

Recipe Ingredients for Creamy Potato Soup

1 tbsp vegetable oil
1 med onion, chopped
1/2 cup celery, chopped
3 cups vegetable broth
8 med potatoes, diced
1/4 tsp white pepper
1 tbsp fresh basil
1 1/2 tbsp butter
3 tbsp flour
2 cups fat free milk
2 tbsp sour cream
1 tsp. salt

Recipe Directions for Creamy Potato Soup

  1. Heat oil in large pan over medium heat. Saute onion and celery until soft. Add broth, potatoes, pepper and basil. Bring to a boil and then turn down and simmer for 15 to 20 minutes.

  2. While the soup is simmering, melt butter in a small sauce pan over medium heat. Remove from heat and stir in flour. Using a whisk, whisk in milk and sour cream. Put back on medium heat and continue to whisk while sauce thickens.

  3. When soup is done, remove 2 cups of soup and blend with white sauce in a blender or food processor until smooth. Add back into soup and stir until soup is even. Add salt to taste.
