Recipe Ingredients for Creamy Potato Salad

1 large Egg, Whole
12 oz Potatoes, Boiled, Cooked In Skin, Flesh
1 oz Light Mayonnaise
0.5 oz Greek, Non-Fat, Plain Yogurt
1.5 tsp Classic Dijon Mustard
0.33 cup, diced Celery
0.33 cup chopped Red Onion
0.25 tsp Salt, Table
0.25 tsp Pepper, Black
0.25 tsp Pepper, Black

Recipe Directions for Creamy Potato Salad

  1. Place a saucepan filled 2/3 with water on high heat; add egg and cover. Cut potatoes into one inch pieces. Add potatoes to water, bring to a boil. Boil for five minutes until potatoes are tender.

  2. Combine remaining ingredients in a medium bowl; add potatoes. Peel and coarsely chop egg; add to potato mixture.
