Recipe Ingredients for Creamy Potato Salad with Grilled Vegetables

2 lbs red potatoes, quartered
1 lb yellow squash
1 large red pepper, cut into 1-inch pieces
2 cups lowfat yogurt
2 teaspoons lemon juice
2 tablespoons chopped chives
1 tablespoon chopped parsley
1 salt and pepper to taste

Recipe Directions for Creamy Potato Salad with Grilled Vegetables

  1. Place potatoes in a large pot and cover with cold water. Add 1 tsp salt and bring to a boil. Boil until slightly tender but not completely cooked, about 4 minutes. Drain well and let cool. Start grill if using.

  2. Once the potatoes have cooled enough to touch, thread veggies onto wooden skewers, leaving about an inch of space on each end of skewer. Brush all sides of vegetables with olive oil. When coals are ready, grill until vegetables are tender, turning to cook evenly. Remove skewers from grill and let vegetables cool slightly.

  3. Meanwhile, in a large mixing bowl, blend together yogurt, lemon zest and juice, chives, parsley, salt and pepper. Slide vegetables off skewers and into dressing and mix well. Salad can be served immediately or chilled and served cold.
