A touch of carrot and onions for a little more sweetness

Recipe Ingredients for Creamy Potato and Leek soup

3 leeks, chopped (use the white portion)
3 medium potatoes, chopped, yukon gold
2 carrots, chopped
1 medium onion, chopped
2 tbsp butter
1 tsp salt
1 tsp pepper
4 cups chicken stock
1/2 cup 2% milk

Recipe Directions for Creamy Potato and Leek soup

  1. Cut off green section of the leek. Slice through the center and cut inch wide pieces and wash. Chop potatoes, carrots and onions 1/2 inch pieces.

  2. Melt the butter and add the vegetables. Sweat them for 15 minutes on low. Add seasonings and chicken broth.

  3. Simmer for 30 minutes.

  4. Use a hand blender to make the soup smooth and add the milk to finish the soup.
