Creamy chicken-based soup with carrots, peppers, onions and potatoes.

Recipe Ingredients for Creamy potato carrot soup

1 quart low sodium chicken stock
1 1/4 tsp. minced garlic
1 1/2 lb. potatoes
5 oz. carrots
1/2 cup yellow onion, diced
1/8 cup bell pepper, diced
1 1/2 tsp. basil
1 tbsp. grated parmesan
1 pepper to taste

Recipe Directions for Creamy potato carrot soup

  1. Bring chicken stock to a boil in a large pot with garlic.

  2. Add potatoes and carrots. Boil on high for five minutes.

  3. Add onion, bell pepper and basil.

  4. Boil until potatoes and carrots are soft.

  5. Move to food processor.

  6. Pulse until smooth.

  7. When serving, sprinkle cheese on top.
