Basic Polenta made creamier then topped with cooked veg

Recipe Ingredients for Creamy polenta with sauteed vegetables

1 T vegetable oil
1/2 c chopped onion
1 green bell pepper, chopped
1 small zucchini
1 clove garlic
2 T white wine
1/2 c tomato, chopped
1 t parsley
3/4 t basil
1/4 t salt
1 t pepper
1/2 c ricotta cheese
3 T Parmesan cheese
1 c cornmeal
3 1/2 c water
1/2 t salt
2 T Parmesan cheese
1 T butter

Recipe Directions for Creamy polenta with sauteed vegetables

  1. Make basic polenta with cornmeal, water, salt, 2 T parmesan cheese, and butter

  2. Mix polenta with ricotta cheese

  3. Turn into 10 in pie plate

  4. saute veg

  5. pour over polenta

  6. sprinkle with cheese

  7. bake at 350 for 30 mins
