Creamy and delicious. Can substitute olive oil for butter and recommend home-made chicken broth over cubes to keep the salt level down. This takes about 40 minutes to cook

Recipe Ingredients for Creamy Pesto Risotto

1 cup arborio rice
3 cups chicken broth
3 tbs butter
3 tbs flour, whole wheat
1/4 cup pine nuts
1/2 cup basil, fresh, finely chopped
1 cup broccoli
1/2 cup parmesan cheese
2 tbs garlic, chopped
1/4 cup onion, chopped fine

Recipe Directions for Creamy Pesto Risotto

  1. melt butter in pot and add garlic and onions. Saute garlic and onions but be careful not to brown. Add pine nuts and stir in until mixed in.

  2. Remove from heat and slowly add flour stirring as you go. THe mix will thicken until it is the consistancy of classroom paste.

  3. Return to low to med. heat and slowly start to add rice to mix. Rice should get glazed by mixture.

  4. When it is all mixed together slowly start to add broth. Add about 1/2 cup at a time. Each time you add broth allow mix to absorb the liquid and thicken. Once all broth has been added add basil, stir, and cover. Lower heat so everything simmers but doesn't burn. You do not want to burn this as it changes the flavor.

  5. When most, but not all of the liquid has been absorbed add the chopped broccoli and parmesan cheese and stir. Return to low heat and let cook till all liquid has been absorbed and you have a creamy mix in pot.

  6. Serve as side dish or add favorite meat or fish when broccoli and cheese is mixed in.
