Recipe Ingredients for Creamy Pear Pie and Basic Flaky Pie Crust


UNBAKED PIE CRUST:
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup shortening, chilled
3 tablespoons ice water

PIE FILLING:
4 cups pears, sliced and peeled
1/3 cup sugar
2 tablespoons all-purpose flour
1 cup sour cream
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
1/2 teaspoon almond extract
1 teaspoon cinnamon, optional

TOPPING:
1/4 cup all-purpose flour
2 tablespoons butter or margarine, melted
2 tablespoons brown sugar

Recipe Directions for Creamy Pear Pie and Basic Flaky Pie Crust

  1. PIE CRUST: Whisk the flour and salt together in a medium size bowl. With a pastry blender, cut in the cold shortening until the mixture resembles coarse crumbs. Drizzle 2 to 3 tablespoons ice water over flour. Toss mixture with a fork to moisten, adding more water a few drops at a time until the dough comes together.

  2. Gently gather dough particles together into a ball. Wrap in plastic wrap, and chill for at least 30 minutes before rolling.

  3. Roll out dough, and put in a pie plate. Fill with desired filling and bake.

  4. PIE FILLING AND TOPPING: In a large bowl, toss pears with sugar and flour. Combine sour cream and extracts; add to pear mixture an mix well. Pour into pie shell.

  5. In a small bowl, mix toppings ingredients until crumbly. Sprinkle over pears. Optional - sprinkle cinnamon lightly over topping. Bake at 400 degrees F for 10 minutes. Reduce heat to 350 degrees F; bake 45 minutes more or until the pears are tender.
