Lighter pasta dish with lots of vegetables

Recipe Ingredients for Creamy Pasta Primavera

7.9 oz Campanelle Pasta
2 cup cherry tomatoes Tomatoes, Red, Ripe
5 tbsp chopped Shallots
2 cup Asparagus
1 cup Zucchini Squash
5 tbsp Parmesan, Shredded Cheese
3/4 cup Ricotta, Part Skim Milk Cheese
5 teaspoon Juice
4 oz Pancetta

Recipe Directions for Creamy Pasta Primavera

  1. Cook pasta according to instructions and add asparagus and then zucchini (cut into small pieces) Drain and add to the next mixture

  2. Saute shallots, tomatoes (cut into smaller pieces) and pancetta until carmelized in color.

  3. Add juice of 2 lemons and deglaze pan. Add S/P to taste.

  4. Add pasta/vegetable mixture into pan and add parm. cheese and ricotta. Toss together.
