Recipe Ingredients for Creamy Parsnip Oat Soup

2 T peanut oil
1/2 t ginger root, chopped
1 medium onion, finely chopped
1/2 tsp marjoram
1/2 tsp pepper
1/2 tsp salt
5 parsnips, finely chopped
4 c water
1/3 cup rolled oats
2 T tahini
1 T miso

Recipe Directions for Creamy Parsnip Oat Soup

  1. In a medium pot, saute ginger, onion, and spices in the oil until onions turn translucent.

  2. Add parsnips and saute another 3 minutes.

  3. Add water and rolled oats, bring to a boil, then reduce heat to low and simmer 15 minutes.

  4. Add tahini, stir, and cook another 3 minutes.

  5. Thoroughly mix 1/4 broth with the miso, then add miso to soup. Taste, and add up to another tablespoon of miso if desired. NB: Be careful not to boil miso, or it will become bitter and the probiotic benefits will be lost.
