A very nice side dish with just about anything.

Recipe Ingredients for Creamy Parmesan Orzo

1 tablespoon smart balance light
8 ounces whole wheat orzo
1 1/4 cups fat free chicken broth
1 1/4 cups water
2 tablespoons chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 ounce grated parmesan cheese
4 teaspoons pine nuts, toasted

Recipe Directions for Creamy Parmesan Orzo

  1. Heat Smart Balance in a medium saucepan over medium heat. Add orzo (uncooked) and cook 3 minutes, stirring constantly.

  2. Stir in broth and water; bring to a boil. Reduce heat and simmer until liquid is absorbed and orzo is done, about 15 mintues.

  3. Remove from heat; stir in cheese, basil, salt, and pepper. Sprinkle with the toasted pine nuts. Serve immediately.
