Creamy mushroom and pepper soup. Warming and filling. Makes a lovely starter or a good winter warmer after a walk on a frosty day.

Recipe Ingredients for Creamy mushroom and pepper soup

400 g mushrooms (prepared uncooked weight)
400 g yellow or red peppers (prepared uncooked weight)
35 g salted butter
1 stock cube
85 g breadcrumbs
1 clove garlic
1 black pepper
400 ml lite coconut milk (1 can)
300 ml water (approx)

Recipe Directions for Creamy mushroom and pepper soup

  1. Clean mushrooms and finely slice two or three mushrooms.

  2. Roughly chop rest of mushrooms and de-seed peppers (or finely chop if no blender available).

  3. Make breadcrumbs by taking three slices of granary or wholemeal bread, remove the crusts and blend the rest until it becomes a fine-ish crumb.

  4. Melt butter in a large pan and fry the sliced mushrooms then remove from the pan leaving the butter in.

  5. Add the remaining mushrooms and the peppers to pan with ground black pepper and garlic.

  6. Sweat over a low heat with lid on for five minutes.

  7. Crumble stock cube over the ingredients and stir. Stock cube should be vegetable boullion if available, but chicken will do.

  8. Sweat for another five minutes or so.

  9. Blend ingredients.

  10. Add breadcrumbs gradually.

  11. Add coconut milk gradually stirring all the time.

  12. Add sliced fried mushrooms.

  13. Add water until desired thickness is reached. The soup should coat a spoon. (Tip: if freezing don't add any water at this stage, do it when defrosted as it'll save space in the freezer.)

  14. Gradually bring back to simmering temperature stirring frequently.

  15. Serve. A serving is approximately one cup.
